I prefer to use one word as it's easier and tidier especially when filling out KC entry forms as there is not much space!
I used to use a theme, which looked good all listed together but some names on their own just looked silly and new owners were not always impressed with my choices.
Now I start each litter with the same letter, this way I know which litter they belong to if someone mentions them to me a few years down the line.

Haha, love that. I named my lab Pint O' plain, called Pint of course.

When the breeder names the pups they can use up to 24 letters. If the new owner wants to then add their affix it has to go as the last word and small words such as " of, at, with, can join the names, such as " Kenine Rob of Rytex". In this case the pup was named by the breeder: " Kenine Rob" and the new owner adds their affix and the word "of" you now have "Kenine Rob of Rytex".
The addition of an affix by the new owner does not count in the 24 letters.
An affix can be up to 12 letters.

Stick to it with champagne names it's cool :) a few suggestions.

Perrier-Jouët - Belle Epoque
Louise Roederer - Cristal
Veuve Clicquot - La Grande Dame
Dom Perignon - Oenotheque
Bollinger - Grande Année
Pol Roger - Sir Winston Churchill
Krug - Clos d'Ambonnay
Krug - Clos du Mesnil
Billecart-Salmon - Clos Saint Hilaire
Billecart-Salmon - Elisabeth Salmon
Billecart-Salmon - Nicolas Francois Billecart
And you said yourself Moët & Chandon

Perhaps the names from the various regions of champagne?
Hautvillers, Epernay, Reims, Ay?
From the top of my head.
