Turkey, Goose, Beef?

Post by Dawnrazor »

What are we all having for Christmas dinner?
We had Guinea Fowl last, not sure what to get this year, maybe a duck????
Sherry trifle for pud', we had lobster for starter last year but I thought it was a bit expensive for what you got!
Salmon, or a good old prawn cocktail this year, not sure but whatever it'll be washed down with enough Bailey's and beer and wine and port and beer that I'll probably not give shit what I had!!!!

Mine too Wullie, with a bit of melted Stilton on top. Might get away with rib of beef on Boxing Day when the brat comes home but as we are Darby and Joan on the big day I might do chicken (or possibly duck) with trimmings - cheap and the dogs love the left-overs.

Much more expensive too unless you shoot.

Shouldn't think so for a minute! But at least it wont be full of little bits of metal, with any luck.

Normally beef Wellington Xmas day. However this year is a major change of plan. Her indoors is on strike which means one of two things, I go hungry or I got to cook!!!!!! Whilst hunger maybe my preferred choice don't think I'll get away from it.
So in preparation I have bought my first cook book, 97 ways to cook pheasant. So pheasant it is! I shall report back after consumption.... If iam alive :D

I rear my own geese every year and as the family eat goose quite often they have voted, majority decision, for a turkey for a change!! Honestly why do I bother (I voted for beef). One thing I would say about goose is do not listen to Delia Smith, she cooks hers for about three years. Assuming the bird is not stuffed I remove the legs and put those in for about 20 minutes before the bird which goes in for about 1 hr 15 min for an 8-9lb bird, bit longer if it is 10-12 lb and then 30 minutes rest. Very hot oven to start for 25 minutes then turned down. It took a while to convince my wife that this was right and she believed that I was either going to poison everyone or it would be ready hours after the rest of the veg, potatoes were but even she is convinced.
Now she is a convert and leaves it to me.
